: Never too early to start my #mealprep! I try to avoid using processed foods, and I tend to favor fresh veggies > frozen, so you'll see a lot of me taking the extra time to rinse & steam them properly. Today's lunch: Spicy Shrimp Alfredo with Broccoli & Penne Pasta- Use whole, jumbo shrimp that have been de-veined & peeled (or clean your own), steam broccoli crowns along with Luigi Vitelli whole-grain penne pasta. I season the shrimp w red pepper seasame oil, Frank's red hot, fresh garlic & onion powder. The cook times for all 3 items is about the same, so you won't need to start the shrimp WAY ahead of everything else like you would w chicken. Once the broccoli & pasta are done, combine them in a small bowl. Add vegan Alfredo sauce (Victoria's is AMAZING & will cut the fats by 1/2, even fr the low-cal variety), and sprinkle Parmesan cheese on top.
